Swiss Double Stuffed Potato |
They are easy to make, you can use your Oven, Barbecue or a Microwave to create it. They are also a fun way to serve up an "Irish" dish for St. Patrick's Day, if you are looking for ideas.
A Baked AND Stuffed Potato will go well with pretty much any protein, additionally, you can mix up the ingredients and create a full meal out of it as well.

Cheddar Cheese Double Stuffed Potato |
A Russet Potato is the usual fare when baking a Potato due to the thickness of the skin, however, you can use other varieties, just be a bit more delicate when handling them after they have cooked.
I will give you a couple of Double Stuffed Potato recipes and some additional ideas at the end of this post.
Important!!!
Regardless of the method you use to create Baked or Stuffed Potato, Safety FIRST. A Baked Potato is really HOT once it has come from the cooking source. Allow them to cool prior to handling them with your hands, use tongs or oven mitts when transferring them from the oven or baking tray! Don't handle them with your bare hands unless they have cooled enough for you to do so. Trust me, I learned the hard way! *
Firstly - The Basics How to Bake a Potato
Preparation:
Wash your Potato/s and pierce the ends top, bottom and sides with a Knife or Fork. This allows moisture to escape while the Potato Bakes, don't skip this part.
Lightly sprinkle with Salt
Microwave Method
Put on a plate and place, uncovered and bake on a Medium setting for 4 to 6 minutes.
Most Microwaves these days have a pre-set "Potato" setting which makes it an easier choice.
Oven Method
Wrap for Oven or Barbecue |
- Wrap your Potatoes with Aluminium Foil
- Bake for 45 to 50 minutes or until the Potato feels slightly soft when you press on it with tongs.
OR
- Bake your potatoes at the same Temperature as you may be cooking your Roast at. It may take a little longer but it saves on energy if you are already cooking.
Barbecue
Basic Baked Potato |
- Pre-heat your Barbecue to 400 F
- Wrap your Potatoes with Aluminium Foil
- Barbecue for 15 minutes, turn the Potato, and Barbecue 15 minutes more or until the Potato feels slightly soft when you press on it with tongs.
The outer skin may get a little crispy on the Barbecue, just so you know.
You can serve the potato undressed as is at this stage or you can switch things up, take a few extra steps and stuff it with extra ingredients.
I have several recipes for a Stuffed Potato, the two which I am sharing here are very rich and have loads of flavour, Cheese and Butter. These are also not side dishes I will serve every week as they do have a lot of calories. For special occasions or to accompany a roast dinner, I don't mind taking the extra time to make them to accompany a Holiday Meal. You can also create a few Ideas to use as appetizers for St. Patrick's Day if you are having a party and planning a head.
I have used Russet, Yukon Gold, Red and Baby potatoes for creating stuffed potatoes too, the variety doesn't matter, though the flavours are slightly different.
The only difference between the varieties is whether I peel the skin or leave it on. Russet potatoes I will remove the skin when creating the filling, the other varieties I do leave the skins on when mashing.
Double Stuffed Potato Recipes
It is easier to prepare your Baked Potato ahead of time. They will be cooler to work with and you will re-heat them to melt the Cheese in these recipes.
Bake your Potatoes and allow them to cool well enough that you can handle them.*
Line a baking dish or tray with Parchment Paper or Aluminium Foil to catch any melted cheese.
Pre-heat your oven to 350 F
Slice the Baked, cooled Potatoes in half.
Leave One half of each Potato intact but scoop out a portion of the interior with a Spoon.
Dice or Mash the second Halves of the Potatoes with your ingredients from the recipes below
Form the Mashed Potatoes with the ingredients into small balls - Large enough to fill the intact Potato Skins
Fill the intact Potato Skins with the Mashed ingredients
Press lightly into the skins.
Either form a well or slice the tops of the Mashed Ingredients and add your cheese.
Bake for 20 to 25 minutes or until Cheese has melted

Recipes
Double Stuffed Swiss Potatoes
2 Potatoes = 2 Servings
2 Medium Sized Potatoes
2 TBSPs Butter
1 TBSP Cream or Sour Cream
2 TSPS Fresh Diced Parsley
1/2 Cup Swiss Cheese, Grated+
+ Reserve half of the Swiss Cheese to sprinkle over the top of the Filled Potatoes add the other half of the Cheese to the Mashed ingredients.
Slice Potatoes, Mash Half with the ingredients above and follow directions above.
Double Stuffed Cheddar and Onion
2 Potatoes = 2 Servings
1 Small Or Half of a Large Garlic Clove - Finely Diced
1 Slice of Yellow Onion, 1/4 Thick and Finely Diced
2 Medium Sized Potatoes
2 TBSPs Butter
1 TBSP Cream or Sour Cream
1 TSP Basil, Dried""
1/2 Cup Cheddar Cheese, Grated++
Dice and Sauté the Onion and Garlic in the Butter.
Allow to Cool and add your Potatoes, Cream, Half of the Cheddar and Basil
Mash the ingredients above, follow directions above.
This recipe I formed a "Well" by pressing my thumb into the mashed ingredients.
"" Use a small portion of the Basil to Sprinkle over the Cheese prior to baking.
++ Reserve half of the Cheese to fill the Well and add the other half of the to the Mashed ingredients.
Colcannon Stuffed Potatoes

Bake 6 Medium Sized Potatoes or 12 Small and use the recipe to create the filling.
