
Not everything I make requires a recipe. This is a good idea when you need a quick fix for dinner and have the ingredients for a Taco or Tortilla but lack the Taco Shell or Tortilla Wrap.
Last night I had a look at the ingredients in my fridge, I had Pork Roast, which I had pulled from the freezer a day or two ago, and my husband had pulled a loaf of French Bread out to make a few of his lunches with. I decided a Sub Sandwich was what was on the menu.

The day I made it, we used it for Tacos, and I had frozen the remainder for use another day. I have been focusing my ideas on more of an Irish theme over the last week and a bit, and I was craving a Mexican flavour last night. The Irish theme can wait a day.

The Pork Roast and the French Bread worked well to create a "Tex Mex" Submarine Sandwich. All I needed to do was warm up the ingredients, add some Cheese and chop up a few vegetables to serve with it.

Although I have the dough to make a Tortilla Wraps in the freezer, I prefer to get a little creative with the ingredients at hand, rather then let them go to waste. There is no rule that I have to use Tortilla Wraps when I want Tex Mex or Mexican food.
There was enough of the French Bread to make two Sandwiches, as with the Pork Roast.

Added what was left of my Vegetable Stock, approximately 2 Tablespoons, for moisture and a little more flavour.

I turned on the oven to 325 F, covered the ingredients and placed the pot in to heat.
I wanted a Hot Sandwich, which means the Submarine Sandwich is HOT when I eat it, not hot as in spicy, I want to get the bread to a warm temperature without drying it out.
I sliced it, wrapped it in tin foil and placed it in the oven 15 minutes prior to making our Sandwiches. This way I had everything heated through, a crispy crust on the bread and a warm interior.
I warmed up Salsa I had made back in November...I make several things from scratch..not just Bread and Soup.
The bread was cut into a V shape, The lower portion of the bread held the ingredients, and the upper portion of the Bread, I removed the "V" shape, so it did not push the ingredients out of the Sub when I covered it up again.
To dress the Sandwich, I chopped up some Lettuce, Olives and grated Cheddar Cheese and added it to our plates.
OK, nice and easy. When everything was up to temperature, I added the ingredients to the lower portion of the bread, added mayo to one side, with Pepper and Basil.

Baked Cheese on top of Tex Mex Subs then covered it all with the top portion of bread and sliced the Sub in two.
Each Sandwich was 4" in length, a little smaller then what you would get at a Sub Shop, but that was fine, it was more then enough food for dinner.

Only thing that was missing was Sour Cream, but that was also fine, I had enough flavour and the sandwich was Hot, but not Spicy. No need to cool any spices down with Sour Cream.

My husband wanted more cheese, so...he added more cheese. I was fine with the Olives and Lettuce.
I took a picture of his Tex Mex Sub Sandwich instead of mine...his looked more decadent!

There you go, one very quick meal idea. To me, there are no rules in the ingredients I use when I make many dishes. It's fun to mix up ideas to create a variation on something traditional.
You can do the same thing, obviously you don't need to use Pork Roast, pre-cooked Chicken, Beef, or use Beans if you have them . They work just as well. Don't be afraid to add in other ingredients if it suits you. This is great idea to use with many different vegetables or meat.
For me, I am very satisfied with a meal like this...I made the Bread, The Pork Roast, The Salsa, so I know EXACTLY what I'm eating, and I didn't have to make up anything new last night. BONUS!
