Beans are an excellent way to add fibre to your meals and use the Ham Stock to create an amazing depth of flavour to the them. It is an option to use a different Stock when making beans, but I stick to the Ham stock to really play on those flavours.
I finished off my Baked Beans Friday and served up a small portion for both of us with Breakfast this morning. They were soft, smokey and complimented our Eggs and Hash browns beautifully.
I shared roughly half of the Baked Beans and Ham I made with two other people I trade with. I still have two additional portions I have placed in the Freezer for future use, a smaller portion in the Fridge for use with a different dish and we added a little to our breakfast this morning..
I am writing out the recipe for this batch of beans, but there are MANY different spices and flavours you can add to baked beans to really create a wide variety of meals.
NOTE: If you don't choose to make your own Ham Stock, Substitute with Chicken Stock but add clove to your recipe to compensate. It works as well, but won't carry all of those background notes of flavour you get from a Homemade Ham Stock.
Baked Beans - Steps and Recipe
Wash 1 Quart Navy Beans
Cover with 1 1/4 Quarts of Ham Stock
Soak Navy Beans Overnight, covered and in the Fridge
Day Two, Transfer to a Roasting pan or Dutch oven with a lid.
Pour the Navy Beans, and Liquid into the pot.
RECIPE
Add 1 TSP ea:
Turmeric
Cayenne Pepper
Red Chilli Flakes
Garlic
Basil
Oregano
Smoked Paprika
Smoked Salt
1/2 TSP Each
Marjoram
Thyme
Nutmeg
Ground Clove*** If you are using a Chicken Stock instead of Homemade Ham Stock
1/4 Cup Molasses
3 TBSPS Tomato Paste
3 TBSPS Ketchup
3 TBSPS Apple Cider Vinegar
Add 1 additional Cup of Ham Stock
1 Cup of Diced Ham
Stir in your ingredients, cover and place in a pre-heated oven 350 F.
Bake for 1/2 hour, remove and stir contents.
Place back in oven for another 1/2 hour.
Remove from oven, reduce heat to 300 F, stir again and place back i oven for an additional hour.
Remove from oven and let stand, covered, for 20 minutes to half of an hour to cool prior to portioning out.
Baked Beans can be used on their own, as a side dish or add them into Chilis, Casseroles, Stuffed Peppers, Serve with Rice, the list is actually endless. Using the Ham Stock is an inexpensive and flavourful way to add that extra boost of flavour.
I will have other recipes to post that I have used this Leftover Ham and Ham Stock in. Cooking in bulk like this ensures you always have new meals added to your Freezer as you use up older pre-made dishes. It's economical, makes sense, and it is no where near as hard as you may think. The easiest way to make sure you have easy to make and healthy meals is to make them yourself, and in advance.
