Served with a side of Mango Chutney, or any sweet sauce, they are a complete delight and as an appetizer, they are just the right size to take a bite of.

This recipe made 24 turnovers. I froze the extra dough, but you can additionally make Cheese Twists or Pinwheels with the leftover pastry or create something of you own with the extra. I'm very frugal with ingredients, besides, why not save yourself some time and create two or three meals at the same time.
I do advise using a Roma Tomato in this Recipe versus Beef Steak or the Table variety. Roma aren't as wet. If you use the other Varieties, remove the seeds and pat them with a Paper towel to reduce the moisture in the filling. I like a flaky Pastry, not soggy.
Make the Pie Pastry ahead of time so it is ready to "roll". Keep it chilled until you are ready. The colder the dough, the fluffier the results.
24 Chicken Chipotle Turnovers
Pre-heat your oven to 375 F
These will bake for 25 to 30 minutes.
Bake on cookie sheet with Parchment paper as the base, to protect your baking sheet.
I have had my baking sheets for over twenty years. they have a patina to my liking and I never need to worry about them staining. Having said that I very rarely use my non-stick baking trays which I purchased new last year...I'm too afraid I'll stain them, and they look so pretty. =).
Ingredients
1/2 Cup Chopped Chicken
2 Celery Stalks, Diced
1/2 cup Green or Red Bell Pepper, Diced
1/3 Cup Yellow Onion, Diced
1/4 Cup Roma Tomato, Diced
1/2 Cup Cream Cheese
1 TSP Garlic Powder
1 TSP Chipotle Pepper
1 TSP Basil
1/2 TSP Oregano
1/4 TSP Salt
1/8 TSP Nutmeg
1 beaten egg to coat the edges and to use as an egg wash.
A Quick Note on Egg Washes:
Egg washes using the whole egg are fine in pastries. They help seal the edges and will assist the browning on the tops of the pastries. Using a whole egg when brushing the tops of a pastry won't look as good as just using the whites.
If you want a professionally finished look to your pastries, just use the whites of the egg and whisk with a TSP of cold water. One Egg White per 12 small pastries, like the ones I am making in this post, is a good rule of thumb. That should cover you for both the inside edges as well as the brushed tops.
Additionally, you don't need to use an egg wash on the tops of the pastries, if it's your preference . The reason I am telling you this... I used very little egg wash on the tops of these pastries when I made them. It reminded me to tell you about why we use an Egg Wash. Even when Baking bread, an Egg White brushed over the top of a loaf of bread, deepens the colour and gives it a hint of "shine". Using Butter softens the crust versus an Egg Wash which ensures you get a very crunchy outer crust.
Instructions:
Add your Chicken, Diced Vegetables, spices and Cream Cheese into a bowl and Mix thoroughly.
Form 24 Balls, cover and leave them to set in the refrigerator as you roll out your pastry dough.
Cut 24 rectangles, 2 1/2" x 3" each.
Brush edges of the pastries with your Egg Wash.
Place your formed Chicken Chipotle Balls onto the centre of the rectangles.
Fold the edges together and firmly press the edges.
You can use a Fork or your fingers to create a design or ruffled edge on the pastries if you wish.
Cut 2 Vent holes on the tops of the pastries.
Brush with Egg Wash again.
Bake for 25 to 30 minutes on the middle rack of your oven.
Allow to cool on a wire rack for 10 to 15 minutes prior to serving. 30 minutes or more prior to storing in the fridge, so they don't become soggy the next day.
These were served with a Chutney I asked my husband to pick up a Mango Chutney from our local grocery store to serve with these little Chipotle Chomps, as I knew the sweetness from the chutney would balance out the savoury smokiness of the turnovers. I made a good choice. In all I heard great things about them. The two that we sampled were really good too.
