There are many variations to Scotch Eggs. After I learned how to make a Basic Scotch Egg, I started playing with different ideas to change up their flavours and use them in different meals or for entertaining. I have made many varieties over the years, from the "Basic Baked Scotch Egg" to Italian Sausage, Chinese and Asian Styles. It's a very fun idea to play with.
A traditional Scotch Egg is breaded and fried, mine are not. I bake them, it lets more of the fat drain away from the ground meat and you still get one very tasty dish.
Today I made a Video to demonstrate how to use Quail Eggs to create Scotch Eggs. This recipe does not contain Bread Crumbs, has a more "Italian Sausage " flavouring and they work very well as an appetizer or as bite size snacks. I'll post the Video for you to view.

The Video took several hours to create, and I think it does the trick to get you that recipe, I won't re-write the whole recipe, unless I get a comment otherwise.
My Basic Scotch Egg LINK to the recipe. There are two variations in this post.
There is one more Scotch Egg post I will post in Future. It has an Asian twist and is a lot of fun to eat and to make.
That's it for today, you have a wonderful week.
Please enjoy!
