We had a Ham Shoulder over the Holidays. It was pre-smoked and an easy enough Easter Meal for
me to make. Smoked Ham has a ton of flavour and it is also a an excellent item to make multiple meals out of. We have already had one dinner, a couple of nibbles and a breakfast using the Smoked Shoulder. I am now in the process of breaking it down to further utilize it in Home Cooked meals for the future.

Smoked Ham usually has a high salt content, we have been using smoking and salt as a preservative for several hundred years. It's how we managed to get to such a large population. Being aware that heavily preserved meat and foods contain as much salt as they do is beneficial. Not just for your health but for your spicing as well. You needn't add additional salt to the extra meals you are making when using them.

I am currently making Ham Stock with the Shoulder, removing the excess fat and taking off the connective tissue from the portions I pulled from the bone. The bones gets covered with water, as well as the excess trimmings, and I am bring it all up to a boil.
