My husband will have to be patient with the types of meals we will be having over the next couple of weeks. He'll be eating a lot of Soup, Stuffed Peppers and Curries. It's better for him anyways.

I made a couple of Vegetable Pizza on Thursday. I had a lot of garlic which was roasted up and ready to use. One was for us, the other went to a neighbour who had given me more Garlic, Flax Seed, Tea and some additional items. All that soup stock I had made the last two weeks, she received a very healthy portion of the finished products. More on that later.
How to Roast Garlic Cloves
I usually make a thin crust pizza every other week. It usually lands on a Friday and he'll chip in to help with the preparation. I have posted on several types before. I don't normally add meat if I'm using a lot of cheese, but depending on the ingredients at hand, sometimes I will. I LOVE pizza as it's a great way to maximize the ingredients in your fridge. Eating healthy is important, so is cooking smart if you don't want to waste anything. The less Cheese you use the healthier it can be. If you aren't gluten intolerant this is a great evening meal.

Pizza is the ultimate food in my book. It can be served up so many ways the variations are pretty endless. It also gives you a wonderful way to add variety to your meals throughout the month. For all of these Pizza Variations, Preheat the Oven to 450 F.
It's best to use a cookie sheet for the Thin Crust Recipe.
This recipe won't work so well with Pizza Stones unless they are preheated. I've done it, but the trays are easier.
Use either Corn Meal or Sesame Seeds to sprinkle your trays with.
Place Pizzas on the centre rack to cook.
Pizza Flavour Variations
Bell Pepper Pizza - My Go To!
Bell Peppers, Green, Red, Yellow, Orange 1/4 of each Sliced
1 Large Tomato Sliced
1/2 Yellow Onion
1/2 Cup Spinach Chopped
1/2 Cup Light Mozzarella Cheese sprinkled over the top
Herb Infused Olive Oil to Brush on the Base
Spinach Asparagus Pizza
8 Asparagus Spears
1/2 Cup Chopped Spinach
1/2 Yellow Onion Diced
1/2 Cup Goat Cheese Sprinkled
Sun-dried Tomato and Basil
Roasted Garlic Tomato Sauce - For the recipe below. Roasted Garlic
I'll create a new post for it in a day or two.
Roast 3 cloves of Garlic with 1 Large Shallot
Add Roasted Garlic 1/2 of the the Shallot to a container.
Add 2 TBSPS Olive Oil
Add 1/4 Cup Tomato Sauce
1 TSP Basil
1 TSP Oregano
Blend together. Place aside and use at the base of your Pizza. I used this one on the Garden Avocado Pizza recipe below.
Garden Avocado Pizza
1 Ripe Avocado
***Do not cook with Pizza! Mash and add afterward the pizza has rested 5 Minutes. It's an absolute delight!
2 Bell Peppers, Yellow Red 1/2 of each Sliced
6 Asparagus Spears, Halved
1/2 Large Tomato Diced
1/4 Yellow Onion Diced
1/2 Shallot, Roasted, sliced
1/2 Cup Spinach Chopped
1/4 Cup Light Mozzarella Cheese sprinkled over the top
Roasted Garlic Tomato Sauce for the base
There you have it, Light Crispy and a wonderful way to end the week. Have a glass of wine a slice of pizza and enjoy your evening!

The Beet and Onion Sauce - I'll be making that today as I am making two pizzas for another neighbour...she wanted to try it and had a LOT of beets. I can certainly make use of them
