I quite honestly can't decide what to call last's nights dinner. A Pocket, Pasty or a Calzone. For now I'll explain why I made it.
It has been a very busy month so far, there are many projects which have my attention. I'm very grateful to have a selection of food available to me which I can just pull from the freezer and re-heat. When I get busy, I don't have a lot of energy to spend on making a three course dinner every night. It's very convenient to have homemade, pre-made meals available to choose from. It's easier to just make a salad or a side dish of vegetables sometimes.
Having said that, I still like my variety and It's enjoyable to get creative with ingredients, as I did last night. I have a soup in the works, it wasn't ready for last nights meal, so I poked around the kitchen and chose some ingredients to play with.
I decided to make a Calzone, but I used Chicken instead of Sausage. I did serve it with a Tomato Sauce, but the Cheese I used was Cheddar, not Mozzarella. I baked it instead of frying it.
I am not posting a precise recipe as I didn't keep track of the ingredients, this is however, a fabulous meal idea to give you. All you need is a little creativity in the kitchen somedays.
There was Pre-cooked Chicken Breast, Eggplant, Roasted Garlic, Onion, Roma Tomato and Peppers available to me. I had the Onions and Garlic ready made to use in the soup stock I'm building.
Roasting the vegetables adds a depth of flavour to the broth. I kept a few garlic cloves and Onion slice for use with the Calzones?
I used my Thin Crust Pizza Recipe , added a little bit of Cheddar cheese into the chopped chicken and Vegetables, stuffed the pizza dough and folded the edges. A few vent holes were added to the top to ensure the Pockets (Pasties?) didn't explode.
A little cornmeal was sprinkled onto a baking sheet, Oven was pre-heated to 400 F. They took 25 minutes to brown on top, and I brushed them with olive oil at the end to soften the crust.
Regardless of what I decide to call them ... they were delicious, made on a whim and we have a few extra to choose from for lunches this week.
You can be very creative once you know how to mix up filling ingredients to include into different vehicles such as Pie Dough, Bread Dough or even Vegetables.
I am creating is a Steakhouse and Bean soup with the stock I have in the works. It's one of those dishes I add flavour to as I go. Again, not everything I do translates into a firm recipe. While I was making the stock, I made several vegetable dishes and included portions of them into the Stock as I went. I multi-task a little to often, the results are always different.
Once I've decided whether to call this Dish a Chicken Pocket, Chicken Pasty or a Chicken Calzone ... I 'll make more and actually write it out, so I can share with you next time.
