I mentioned in a post previously that while in the UK, I had a "Fried" Breakfast or two. They fried everything, including the bread. Unusual for me, but not an unusual custom over there. By the way... it was really GOOD! This is a play on that breakfast, but with an Irish Twist as they have their version too. I'm not doing a traditional dish, I'm showing you how to take an idea, and make into an appetizer for St. Patricks's Day that would suit the theme.
 Where some people "deconstruct" a dish to serve, I sort of "constructed" this based on what I remember and what I know. I'm not using any egg for this idea, but you most certainly can if you wish. Either a boiled egg sliced thinly or a fried quails egg would work. For my purposes, this is enough and you get the idea.

This is my take on an Irish appetizer.
I'm using bread I have on hand, as it's the right size for this idea, and an easy bite, that's important for an appetizer. Baguettes or French Bread would work as well, or any specialty bread at this size.
I made enough to serve 10 pieces, and my ingredients are based on that quantity. Double the ingredients if you wish to serve more. I would serve this hot and I would not add greens to the plate. The bottom of the bread would go soggy. I used chopped Parsley and some Orange Bell Pepper, thinly sliced, to help the appeal of the plate.
5 Bread Slices - Small Loaf - see above
10 thinly sliced pieces of ham, large enough to fit on the Bread you plan to serve.
1/2 of a Potato, Julienned
1/2 of a Carrot, Julienned
2 Slices of Onion,
3 Small Cabbage Leaves, Rough Chopped
 Leek, Just a few Slices, Diced
Leek, Just a few Slices, Diced2 TBS Olive Oil - to Sauté the Vegetables
Grated Mozzarella Cheese and Chopped Parsley to finish.
Spread
1 TBSP Mayonnaise
1 TBSP Prepared Yellow Mustard
 Whisk Together and spread on toast prior to including ingredients.

Sauté the Onions, Potatoes and Carrots first, Medium to high heat and sauté until you see the caramelization forming, reduce heat to Medium.
 Add Cabbage, and Leek, stir it all together and let everything sweat down a little. Once the Leeks are a dark green, remove from heat.

Once the toast is done, add the Mustard Mayonnaise spread, the thinly shaved ham, top it off with the cooked Vegetables.
Add a small bit of grated Mozzarella to the tops and broil for 2 to 3 minutes until the cheese has started to melt.
Add the Parsley and Plate.

Since it's now Friday, and many St. Patrick's Day activities will likely happen this weekend, I think that's the end of my St. Patrick's Day themed recipes...next year however, I already have new ideas to play with, but back to the original purpose of my posts. Cooking, cooking wisely and using the ingredients you have at hand to plan your meals.
I can't wait for Easter! I have a few more ideas I'd like to try out for that theme too!
