A Quesadilla is as easy to make as a Pizza, and you don't need to make the wraps from scratch, but I like to. Just like a Pizza, you can play with the ingredients and come up with such a wide variety of finished dishes.
We made Chicken Quesadillas the other night, I had all of the ingredients at hand and was in the mood for Tex Mex again. Instead of sour cream on our plates, we made an Avocado Yogurt Sauce, and just had some fun with the ingredients over all.
I had made the wraps and had them warming in the oven while I prepped the ingredients below. You do not need to make your own wraps.
You can purchase processed wraps and prepare them the same way, or simply cover them with tin foil and warm them until ready to use. I often make all of my ingredients from scratch, but that doesn't mean you have to.
I won't be posting too many "fillings" for the Tortilla Wraps, as I'm pretty sure if you like a Taco, you know what's inside of it., same with most Tex Mex cuisine. As a quick meal idea, this works very well, and I do very much enjoy being in control of my own ingredients, sauces and all.
Homemade Tortilla Wraps
Yogurt Sauce
1/2 Avocado
3 TBSPS Yogurt, Low Fat
Juice from half a Lime
2-3 Cilantro Sprigs finely diced
1/4 TSP Basil
Salt pepper to taste
Combine the prepared ingredients in a bowl and stir until smooth
I pre-plated the Yogurt Avocado Sauce with the following
Plating
4 Black Olives, Chopped
1/2 Cup Cheddar Cheese, grated
Shredded Lettuce
The following ingredients were enough for 4, 3" x 6" Quesadillas.
Quesadilla Filling
1/4 Red Pepper
1/4 Green Pepper
1 Small Tomato
2 Onion Slices
1/2 Chicken Breast - Pre Cooked, Chopped
2 TBSPs Olive Oil
Spices
1/8 TSP Garlic Powder
1/8 TSP Red Chilli Flakes
1/4 Chili Powder
1/2 TSPBasil
1/4 TSP Oregano
1 Cilantro, diced
1/4 Cup White Wine
Salt Pepper and Pepper to taste
Add wine to pre heated Pan, medium high heat, and let reduce until alcohol burns off.
Add Spices, Onions and reduce until almost all of the liquid is gone, then add Olive Oil, and Vegetables. Cover and let cook a minute.
Turn the ingredients, or stir, add the Chopped Chicken and let cook a minute more. You want your vegetables to be cooked, but not over done, and your chicken warmed up.
After a minute, remove your wraps from the oven, add a sprinkling of cheese to the inside.
Spoon 1/4 of the ingredients into the wrap, and fold over. Do the same with the other 3 wraps.
Sprinkle the remaining Cheese over the tops of the wraps once all filled.
All done. Very messy, but fun to eat.
I made some Tortilla Chips from one of the wraps, by placing them on a baking sheet while the Tortilla wraps were being kept warm, to finish off the plate.
