If you are looking for ways to add flavour to your Chicken or create a new dish for your Family to try out, this is a great way to add a little spice and variety to your plate. Many of us have the challenge of "inventing" new meal ideas every single day. This one technique gives me an ingredient to use with dinner and any leftovers may be used in other ways over the next few days. It makes an excellent Lunch Meat too, there are NO preservatives and the amount of salt used won't give you a heart attack.

A Chicken Roll is very simple to make, it will take me longer to write it out then it did to actually prepare it.
Basic Needs:
A Roasting Pan with a lid and a little Water or Chicken Stock at the bottom.
You will require Kitchen String. If you have never done a butcher's tie I have a video on how it works. It's easier than explaining it.

If you don't have kitchen string, parchment paper will do. there is a link below where I used Parchment Paper to wrap up a Turkey Roll.
Chipotle Chile and Tomato Chicken Roll
Pre-heat your oven to 350 F
Take two Large Chicken Breasts, Slit them down the centre.
The Spices used for this roll are as follows:
Ingredients:
1 TSP Sun-Dried and Ground Tomato
1 TSP Basil
1/2 TSP Oregano
1/4 TSP Garlic Powder
1/2 Chipotle Chile Powder
1/8 TSP each Salt and Pepper
1 1/2 TBSP Olive Oil
Mix your spices together and add the Olive Oil, stir it up.
Coat the inside of the Chicken Breasts with half of the Spice and Oil Mixture.
Place the "undersides of the chicken together so the "Pretty" sides, the smooth ones are on the outside of the roll.

Tie off the Chicken Breasts, fairly tightly, so they don't slip around when you handle them.
Coat the Exterior of the Tied Chicken with the rest of the spices and Oil.

Once the Chicken is seasoned and tied off, place it in a roasting pan with a lid, place it in the oven and let it cook for 35 to 40 minutes. I cook the Doubled up chicken longer as they are than a single breast.
Take it out, let rest uncovered for 5 to 10 minutes cut the string and remove it prior to plating or slicing the meat.
Ta-dah! All done.
After it's cooled, you can additionally slice up the chicken and you have ready to use Chicken Slices for Sandwiches, Salads or Wraps.
