Chicken Pot Pie with Butter Pastry |
For me the Winter Holidays are all about Food, Family, Friends and Fun. As we move into the Holiday Season, I am not as concerned about how "healthy" the meals are. I know I'll be Fasting after all of the Feasting and will definitely start watching my meals again after the festivities are over.
Everything in moderation... including moderation.
Butter Pastry
2 1/4 Cups All Purpose Flour
1/2 TSP Salt *
3/4 Cups Chilled Butter (If you are Salted Butter reduce Salt to 1/4 TSP)
1 TBSP Mayonaisse
6 oz Chilled Water
Makes 1 Covered Pie, 9.5" or 2 Pie Shells of the same Diameter.
The instructions for mixing and rolling out the pastry are the same as the Easy Pie Pastry Recipe with two exceptions.
1 - Cube the Butter to 1/2" squares and dust it lightly with flour before adding it to the bowl. This ensures the butter will be evenly distributed through out and you will get a beautiful flaky texture.
2 - Keep the pastry chilled until ABSOLUTELY ready to use. If you are making a covered pie, leave the second formed ball in the fridge until you are ready to work with it. You don't want the butter to get too warm prior to working the pastry.
EASY Pie Pastry Recipe
I used this recipe for a Chicken Pot Pie, which I will be writing the recipe for shortly and made 2 Old Fashioned Apple Pies with as well. The link to the apple filling is below. I do find that a Pure Butter Pastry rolls out differently then the one with Margarine additive. The viscosity of the fats are slightly different. The Butter needs a bit more attention but the result is worth it.

I am updating older posts with newer links to the most current recipes as well, please forgive me as I am a little behind with tending to my Blog. I've discovered that this endeavour is likely as much work as writing a series of cookbooks, but it absolutely worth the effort.
