This recipe is a quick meal idea, easy to prepare and has little clean up. That's always a bonus when you and your family are busy and may just want something quick.
A Chicken Cacciatore is a "hunter" style dish. You can mix up the vegetables you use but, Olive Oil, Onions, Bell Peppers and Garlic are usually in the mix.
You can also simmer it down with wine if you choose. For the purposes of this recipe, I will keep it simple to show you how easy it is to make.
I will share another recipe in future which takes more time but is worth the effort. The purpose of this post it to give you a quick and easy meal idea. We are going to dress the Chicken in a Sun-dried Tomato and Roasted Garlic Marinate, which has a beautiful flavour as it is, and this is still an incredible dish.
I create Infused Olive Oil at home, it's a little cooking trick I use, which saves us a few pennies, reduces waste and adds a world of flavours to our dishes. We rarely buy any sauces or marinates anymore, we find making our own is more fun, plus we control the ingredients.
For this dish you will need the Sun-Dried Tomato and Roasted Garlic Olive Oil. 2 Tablespoons to marinate the chicken and one for cooking. You can reserve the rest for cooking with another day.

This Recipe serves 4 and is served over Pasta, Rice or any other vehicle you wish. It's more of a Stew which has a thinner sauce than Tomato Sauces you buy in cans.
Basic Chicken Cacciatore
1 Large Chicken Breast, Diced
Rough Cut, approximately 1" in Diameter.
1/2 Red Bell Pepper
1/2 Green Bell Pepper
1/2 Zucchini
1 Slice of Yellow Onion, 1" Thick
2 Cups Diced Tomato (Low Sodium, Organic, or dice Fresh Tomatoes)
Extra Spices
3/4 TSP Basil
1/4 TSP Oregano
Make your Infused Oil ahead of time, Prepare your vegetables.
Cube the Chicken Breast and Marinate the meat in 2 Tablespoons of the Marinate.
On your stove top, in a pan or pot, bring 1 Tablespoon of the Oil up to a Medium-High Temperature.
Add the cubed Meat and Stir, making sure all sides of the chicken cubes cook in the oil.
After 4 to 5 Minutes, reduce heat to Medium.
Add your Onions next.
Cook them for approximately 3 to 4 Minutes, while stirring, until they become slightly translucent.
Add your Vegetables, 2 Cups of Diced Tomatoes, Basil and Oregano. Stir Once again.
Cooking Trick - Save on Clean Up!
As a quick trick, you can add Dried Pasta to the dish now and let it cook while the dish simmers. Add an extra 1/4 Cup of either Tomato Juice or water. Stir and ensure the pasta is covered. Stir again half way through and re-cover. Serve when Pasta is at the texture you like best.
Make your pasta separately, if you are worried about meal timing.
Leave temperature at Medium, Cover with a lid and let simmer for 10 minutes.
That's it. Nice and easy and with loads of flavour.
There is more than one way to make a Cacciatore, as mentioned above, I will be posting another recipe in future, but feel free to mix up your ingredients and try different vegetable combinations. I love playing with variations too.
