Although I still have more ham in the freezer, which I can create even more dishes with, I will leave this as the last post on making additional meals with Leftover Ham. I hope this recipe and links to others will show you how to best utilize Ham as an ingredient.
I'm only touching on a very small portion of ideas. The next time I make a Ham Shoulder, I'll post on Ham Hash and a few other recipes for breakfasts and lunch too. For now, It's all about a Velvety, Rich Ham and Potato Soup.
The Last of the Ham Stock I made, I gave a portion of it away to a neighbour, who is making her own dish with Leftover Ham, and used the remainder to make a very decadent soup. I do cook with milk, butter and cream, but in moderation these days. This soup will call for Dairy as I wanted a velvety texture to this soup stock.
Ingredients
1/2 to 1 Cup Cooked, Chopped Ham (it depends on what you have)
3 Quarts Ham Stock
2 Cups Milk (2% or Whole)
1/4 Cup Butter
Cut all of your vegetables to roughly the same size. You want to be able to easily pick up your vegetable portions with a soup spoon.
Vegetables
6 Small Potatoes
4 Mid-Size Carrots
1/2 Large Yam (Sweet Potato)
6 Celery Stalks
Additional Seasoning
2 Garlic
1/4 TSP Ground Cloves
1 TSP Ground Pink Peppercorn
1 TSP Marjoram
1/4 TSP Rosemary
2 Bay Leaf
This is easy to make, I used 3 Quarts of Ham Stock, brought it up to a boil and let it reduce by a 1/4.
Once reduced, remove the Bay Leaves, add the diced Vegetables (not Celery) and the additional Spices.
Once the Potatoes just start to get soft, 1/4 Cup of Butter and 2 cups of Milk (2% or Whole), add the Celery to the pot.
Bring back up to a boil and stir.
Add in Ham.
Reduce heat. Let cook another 10 to 15 minutes, and remove from heat.
All Done!!

As an aside, you can also use Ham on a Pizza. We make a Vegetarian Thin Crust Pizza regularly, if you add chopped up ham to any of these recipes, you will have an easy to make and DELICIOUS way to conveniently use any leftover Ham you may have on hand.
There will be more ideas in future, I am now working on more lighter meal ideas as Spring is here, the Holidays are well past and I don't have any urgency to make any more Ham dishes until the Fall.
