Many of my dishes take an hour or more to create. This is a quick and easy bite to make when you are in a hurry. If you have French Bread, cooked Chicken Breast, you can make it in 25 minutes or less.
Serve it as a side to a bowl of vegetable or tomato soup or just on it's own.
We make our own Infused Olive Oils, and I had some at hand. The recipe for that is here. I have additionally started to add videos to my recipes, to make it easier to show the techniques. A few readers have let me know the videos make it easier to get the "idea" across. I do hope it helps others.
Herb and Garlic Infused Olive Oil
This is a simple recipe but it is a good one to have when you are on the run, or, if you just want to have a Cheesy Chicken Bruschetta.
Cheesy Chicken Bruschetta,
Pre-heat oven to 425 F
*** You will lower heat after 10 minutes and switch to a Broil at 350 F
Ingredients
1/4 Loaf of French Bread, Sliced Lengthwise
2 Slices each of Red and Yellow Pepper, diced
4 Cherry Tomatoes, diced
1/4 TSP Basil, Sprinkled over the vegetables
1/4 Cup grated or two slices of Marble Cheese for the top.
Slice your French Bread lengthwise, brush the sliced face with the Infused Olive Oil.
Add your Vegetable mix over the Olive Oil.
Add cubed Chicken and grated Marble Cheese to the top.
Place in the centre rack of the oven for 10 minutes.
Turn heat down to 350 F, turn on the broiler. Let broil until cheese is melted.
All done.
This Bruschetta is a quick bite to make, but it is also delicious and crispy.
My next post will be about Beef Ribs. I made them several weeks ago and have not yet written them out yet. I have several months worth of recipes to write out. Some are very quick, some may take 3 hours to create but I will cook in bulk and freeze dishes that take that much of my time.
I love to cook, but I can't justify that sort of energy in a meal every day. I'll be adding more of these types of meals in future, for those of you who do have such busy schedules.
