In previous posts, I have mentioned that I trade with my neighbours and friends. It's quite a lot of fun and we all get the benefit of sales, each other's gardens and ideas. Every once in a awhile, I will receive an abundance of vegetables.
I was doing a little dance the other day as one of my friends went to help another in his garden. He dropped off some of what he picked. I started laughing when I saw the sheer amount of vegetables he left on my steps. I was quite literally vegetated by the volume of vegetables in the bucket.
The size of the potatoes was insane, I rarely see them at 9" in length, unless it's a yam. If you live on a farm or are a SERIOUS gardener, you may be used to seeing such an abundance of root vegetables in the Fall. I haven't seen anything like this in years. I was laughing pretty hard by the time I started to clean the vegetables and sort them.
The bucket contained way more vegetables then myself and my husband could possibly consume on our own, so, as I was cleaning and washing the produce, I sorted them into piles which I could share with some of my other neighbours as they were, and created a pile for myself which I could cook with.

Even after giving away a couple of dozen carrots, potatoes, zucchini and beets, I still have a lot of produce I can play with.
I love to cook in bulk, as Fall is here, this is the time of year to make the most of your garden and the affordability of fresh vegetables. I have several ingredients already in the house and won't need to pick up too much to pull of a several ideas. I have been getting requests to make my Vegetable Bread and Tea Biscuits too. I guess I'm back to baking for those folks who enjoy having a few baked goods in their diet.
I have planned several meals already, I have recently made Chicken Stock, Beef Stock and currently have a Ham in the oven. It will cool overnight and I will have a little help this week with making not only the items mentioned below, but some vegetarian, fish and gluten free ideas too. I will have a few new recipes to post for bulk cooking.

Ham and Leek Chowder
Irish Chicken Asparagus Pies - Family Style, and variations
I will also be making vegetable soup, that's an easy decision.
