For me, lunch has to be be quick and easy as I tend to be busy most of the day. I had baked a full salmon the night previously and had more than enough left over to make a salmon and blueberry wrap the next afternoon. You can substitute tinned salmon if you don't have a baked one at hand, additionally, tuna works as well, with the blueberries.
Here are a few ideas for quick, tasty and easy lettuce wrap ingredients. For transporting to the office or work, keep the mixed ingredients in a separate container from the lettuce you choose to have it with. Iceberg and Romain lettuce tend to be the best vehicles for lettuce wraps as they keep the "crispy" texture better than Butter Leaf lettuce once cored.
Each idea below is for a single serving.
Salmon and Blueberry Lettuce Wrap.
Salmon, Approximately 2 Tablespoons from a Tin.
Pinch of Dill
1/2 Teaspoon Prepared Mustard and a drizzle of Olive Oil
a Pinch of Salt and Pepper
A squeeze of lemon juice.
1/4 Cup Blueberries
Iceberg Lettuce.
I made my wrap quickly and added the ingredients mentioned above. If taking this to the office, mix the Salmon, Dill, Salt, Pepper, Lemon Juice and Mustard together, and use a small container to transport it and add your fresh Blueberries and Lettuce to a separate container. You can assemble the ingredients together when you are ready to have them.
Two Additional " Sandwich" Ideas for Lettuce Wraps:
Egg Salad Lettuce Wrap
1 Hard Boiled Egg
2 Cucumber Slices - Diced
3 Slices of a Celery Stalk, Diced
A pinch of Dill, Basil Salt and Pepper
1/2 Tsp Mayonnaise and a drizzle of Olive Oil
Iceberg Lettuce
Mix your ingredients including the Celery and Cucumber together, and as above, transport in a separate container from the lettuce.
I have also added chive to my Egg Salad wraps and sandwiches, depending on my mood.
I'm updating this Post with one more Egg Salad Wrap idea using Radicchio as the base. I had this for my breakfast this morning.
Radicchio Egg Salad Wrap
1 Hard Boiled Egg
2 Cucumber Slices - Diced
Sprigs of Cilantro, Diced
1/4 of an Onion Chive, Diced
A squeeze of lemon juice, Salt and Pepper
1/2 Tsp Mayonnaise and a drizzle of Olive Oil
2 Radicchio Leaves
Chicken Salad Lettuce Wraps
1/4 Cup Cooked Chicken breast
2 Cucumber Slices - Diced
3 Slices of a Celery Stalk, Diced
A pinch of Red Chilli Flake, Basil, Oregano, Salt and Pepper
1/2 Tsp Mayonnaise and a drizzle of Olive Oil
Romaine Lettuce
These are quick ideas for a midday meal or a snack at work. One is usually more than enough for me. If you aren't concerned about Carbohydrates or gluten, the mixes work just as well with a sandwich.
All very simple to make and easy to eat. If your lettuce is fresh, you go get a very satisfying crunch when you bite into your wrap. When transporting lettuce, after you wash it, add a small amount of paper towel to the container to catch the extra moisture and help keep the leaves hydrated.
To me these are very simple, but as a friend mentioned, she would never of thought of adding mustard to salmon and using a lettuce wrap as a snack, until I told her. She is cutting down her bread intake as well as a few others I know. This is a great gluten free idea for a snack, but check the ingredients of the Mustard and Mayonnaise you use, if you are concerned about gluten in your food.
