I do love my Salmon. I already have several recipes and they are pretty healthy, as long as you watch how much Tartar Sauce you serve with it. This meal was served with rice as a side instead of pasta, as I have done in the past, and a salad. We may not always eat everything on our plates, but I do try and offer a sampling of everything when I cook.
Apple Dijon Salmon Fillets
This recipe serves 2. Simply double the ingredients if you wish to make more.
1 slice of Onion, Diced
3 slices of Green Apple, Diced
1 TSP Whole Dijon Mustard Seeds
1/8 TSP Dill
1/8 TSP Garlic Powder
A pinch of :
Marjoram
Nutmeg
Rosemary Leaves, Cracked
A pinch of :
Marjoram
Nutmeg
Rosemary Leaves, Cracked
Freshly ground Black Pepper to taste
Pre-heat the oven to 350 F. The total cook time is 25 to 30 minutes with the broiling.
Cut a slit down the centre of the fillets to keep the ingredients in one spot.
Mix the vegetables and spices in a bowl and place on the salmon.
Wrap in parchment paper and place the Salmon Fillets skin side down in the oven, middle rack and let cook for 10 minutes.
Flip the Salmon so the ingredients are now on the bottom and let cook 10 to 15 minutes more depending on the fillet Size.
Once done, remove the Salmon from the parchment paper, lay them skin side up and grill under the broiler for 5 to 6 minutes or until the skin is crisped.
We served with a Small Salad, "Italian Rice" (a recipe I'll divulge later) since I had some left from the previous night and Tartar Sauce.
Easy. Tasty. Done.
This recipe is gluten free and low sodium. I checked the ingredients of the Mustard Seeds and Mayonnaise we used for the Tartar Sauce, and there is no gluten or Milk byproducts. I'll have to be pretty diligent about checking contents of any sauce I may use which I have not made from scratch I'm honestly quite grateful I already did the research for my own diet. Making a few more adjustments is not seeming like to much of a challenge as I already know what we eat.
I didn't add salt to this recipe as we did have the Tartar Sauce and honestly, the ingredients are full of flavour. Salt is a flavour enhancer, I agree, but if you have flavour already, you don't need to add too much. I may have to do a little more research to see if I can break out ingredients to a Daily Recommended Nutrition List. In the mean time, I hope you enjoy!
